ParticipantTeriyaki Stir Fry
140grms chicken breast (cut into chunks) X2
Red chilli (chopped)
Red pepper (chopped)
Green pepper (sliced)
Grated ginger (fresh)
12 mushrooms (sliced)
4 baby corn (sliced in half)
half tin of pineapple
Teriyaki stir fry sauce
Chinese five spice (optional)
Pckt coconut riceSpray wok with fry light, heat up and add chicken, cook for approx 10 mins, add chilli, peppers, mushrooms, ginger, baby corn and some juice from pineapple, cook for a further 10/15 minutes. Add Teriyaki sauce and some pineapple, stir for a few minutes, place rice in the microwave for 2 minutes while stirring ingredients in the wok. Add more pineapple before serving, add chinese five spice if desired. ENJOY

2 garlic cloves
500g beef mince
2 x 400g cans chopped tomatoes
a few oregano sprigs, leaves picked, or 1 tbsp dried
1 beef stock cube
2 tbsp tomato ketchup
4 peppers (mixed colours are nice)
100g grated mozzarella or cheddar
small bunch basil, leaves pickedPan-fry beef mince with onion, garlic, tomatoes and oregano and stuff into roasted bell peppers – top with melted mozzarella cheese

Small handfull of cus cus in a bowl, add boiling water from kettle just above c is height, cover with a tea plate wait 5-8 mins
