    Herby mustard pork n potatoes

    250g mixed baby potatoes, scrubbed, halved

    1 tbsp lemon juice

    1garlic cloves, thinly sliced

    1 tsp Dijon mustard

    1 tbsp extra virgin olive oil

    200g mixed mushrooms

    1 onion, chopped

    8 sprigs fresh thyme, plus extra, to serve ( or a generous sprinkle of dried)

    300g pork fillet, cut into 2 pieces
    Or pork.chops ( cook with the fat on and take off before serving for the best flavour)
    10g (1/4 cup) finely grated
    parmesan

    Preheat oven to 210C/190C fan f. Place potatoes in a heatproof bowl. Microwave on High, covered, for 5 minutes or until just tender.
    Step 2
    Whisk together the lemon juice, garlic, mustard and the oil in a bowl. Place the mushrooms and potato in a large roasting pan. Sprinkle with the onion and thyme. Drizzle with lemon mixture and season. Roast for 15-17 minutes or until just tender.
    Alternatively air fry for 12-15mins
    Step 3
    Meanwhile, heat 2 tbsp oil in a frying pan over medium-high heat. Season the pork. Cook, turning, for 2 minutes or until browned.
    Step 4
    Add pork to roasting pan and sprinkle with parmesan. Roast for 10 minutes or until pork is just cooked through. Rest for 3 minutes. Serve with extra thyme.

    If your looking to reduce carbs from this recipe, reduce pots and add some more leady veggies to your plate. Winter greens or red cabbage would work well.
